• What is a grease trap?

A grease trap or grease interceptor is a pre-manufactured assembly installed in the plumbing system of restaurants and other facilities that serve food, which separates fats, oils, and grease from the waste water coming from a kitchen or food prep area. They may be small plastic or metallic assemblies installed near food prep fixtures (grease trap), or they may be large pre-cast concrete structures installed below grade outside of the facility (grease interceptor). The solids that are separated out have to be removed (typically by pumping) from the unit on a regular basis to ensure proper function.

• How does a grease trap work?

A grease trap works on the principle that water is heavier than oil. As waste water enters the trap, the heavier water is routed down and through a baffle or series of baffles where it then discharges back into the sanitary sewer. The lighter products (fats, oils, and grease) are separated out and rise to the surface where they will accumulate until they are removed (pumped out).

Municipalities are required to maintain the arteries of the sanitary sewer systems they own. Fats, oils, and grease can cause major backups and environmental concerns, which can lead to huge federal fines. This is why cities and counties require generators of fats, oils, and grease to install and maintain a grease trap.
